The “Festival of roasted pigs” is celebrated in the province of Quezon in Philippines. The event is covered by a crust of animal carcasses dressed up in various costumes which are then paraded on the streets. The carcasses are then roasted for the fair. The carcasses are marinated in a mixture of soy sauce, vinegar and spices. Then the pigs were stuffed with tamarind (legumes), pandan leaves, and a mixture of spices. After that, pigs baked on coals.
